Established in 1996, Blackwing Quality Meats provides wholesome red meats, game meats, and poultry to consumers, retailers, restaurants, and foodservice operations across North America. For nearly three decades our focus has stayed the same: better meats people can feel good about serving.

Owned by husband-and-wife team Roger Gerber and Beth Kaplan, Blackwing is a family business built on direct relationships. We source from growers nationwide, maintain our own herds where it strengthens the supply chain, and work to keep integrity from farm to customer.

In 2016, Blackwing opened Old Mill Creek Country Store to serve the greater Lake County, IL community with healthier food offerings. Today the store carries fresh produce, organic coffee, and specialty meats cut and sold year-round — while Blackwing continues to supply internet customers, health stores, and foodservice accounts nationwide.
