Beth's Caribbean Chicken Thighs

  • 8 Thighs
  • 1 stick Organic Sweet Butter or 1/3 cup Grapeseed Oil
  • 3 Tbsp. Fresh Shallots minced
  • 3 Tbsp. Fresh Squeezed Lemon Juice
  • 3 Tbsp. Honey
  • 3 cloves Garlic minced
  • 1/2 cup Tamari Sauce
  • 3/4 cup Mango Juice
  • 1/2 cup Tamari Sauce
  • Pepper & salt to taste

Preparation: Place thighs in a large Ziploc bag. In a bowl combine all ingredients. Pour marinade over chicken thighs in the Ziploc bag and seal. Marinate in fridge 4-6 hours turning bag occasionally. When ready to grill, remove thighs from bag, drain, and place leftover marinade in container to the side.

Cooking: Preheat grill to medium high. Place thighs on grill and reduce heat to medium. Arrange chicken on hot grill and cook, after 2 minutes place the lid down and then lift every 2 minutes, turning pieces often and basting with remaining sauce.

Serving: Total cook time will vary from 7-10 minutes. Chicken will be ready when the juices run clear with the piercing of a knife into the thickest area of the meat. It should not be pink. Serve hot off the grill!
