Preparation: Frozen chicken should be thawed either overnight in refrigerator or immerse in cold water for about 5 minutes. In a bowl mix together Mayonnaise, Dejon Mustard, fresh lemon with paprika and salt. Blend in dried cranberries (or substitution), celery, bell pepper, chives and nuts. Add chopped chicken and mix well. Season with black pepper and chill for 1/2 hour.
Serving: If you want the chicken to be served warm microwave just the chicken for about 1 minute mix it into the salad and serve. For sandwiches: garnish with romaine lettuce, avocados, fill with chicken salad and serve.
