Wild Boar Spare Ribs

- 4 -12oz. Packages (3 lbs.) wild boar spare ribs
- 1 tablespoon ground cumin
- 1 tablespoon chilli powder
- salt and pepper to taste
- Organic sweet butter and/or grape seed
- Blackwing Executive Chef Sauce
Preparation: Place wild boar rib slabs on a chopping board. Pull off membrane sheath from the back of each rack. Combine cumin, chili powder, salt, and pepper in a jar & mix. Place meat in large bowl. Sprinkle as much of the rub onto both sides of the ribs as desired and pour 1/2 cup of melted organic sweet butter and/or grape seed oil onto the ribs. Pour 1 bottle of Executive Signature Sauce onto the ribs. Cover & refrigerate for at least 24 hours.
Cooking: Preheat your grill at 275 degrees F Take the ribs and wrap them in tin foil Place the slab on the grill. Close lid. Cook the slab for approximately 1 hour with the curl side up. Turn the slab over to finish cooking for approximately 45 minutes or until you get full "bend" in the slab.
Serving: Serve ribs as whole rack, or cut between each rib bone and pile individually on a platter.
