Skirt steak is commonly used in Mexican restaurants for fajitas and to top many rice and vegetable plates. Known best for its flavor, the skirt steak tends to have more tough muscle than other cuts so we recommend cooking it rare to medium-rare for the ideal tenderness and flavor.

Our Favorite Cooking Methods: Skillet - Heat skillet on high heat. Add meat and sear 2 minutes on each side, then bake @ 350 degrees until desired wellness. Cover & Bake - Preheat oven to 250 degrees. Baste meat with sweet butter, olive oil or other preferred preparation. Cover and bake 35 minutes per pound. Internal temperature should be 125-135 degrees Fahrenheit. Grill - Sear meat for 2 minutes per side with a high flame. Lower flame and cover 3 minutes per side or to desired wellness. .
